The intro to Colorado Wild states that the recipes within this section were created by Dr. Randall H. Lortscher. Dr. R is an avid sportsman that grew up in a family where the rule was "if you shoot it, you clean it, and you cook it". Some of the recipes are for animals I have never thought of eating: Marinated Rocky Mountain Bighorn Sheep (pg. 252) and what the fuck is a grouse or a chukar??? I have no idea, but will probably be eating these without my sous chef Pabs...

Hey successful, bored, now-that-you've-gotten-your-masters, wondrous one (and infamous all-time greatest Academic Counselor)!!!! A chukar is very much like a quail...a small (cornish hen sized bird)...you know, the one bite and you're done kind!! Good luck on your venture!!

Absolutely! The "wild" side has always been my favorite...just as long as it's not "gamey"...if you know what I mean. Trick of the trade from one of my cohorts back in Wiscsonsin who in in the meat produce business...actually has some authentic recipes of his own...as far as "wild" game...keep the "game" out of the taste, do NOT ever cut through the bone!!
